These energy bars are packed with protein, healthy fats, and natural sweetness from dates and hemp powder. A perfect grab-and-go snack for sustained energy!
Ingredients:
Base:
• 1 cup walnuts
• ½ cup cashews
• ½ cup sunflower seeds
• ½ cup almonds
• ½ cup shredded coconut (unsweetened)
• 1 ½ cups pitted, soaked dates (soak for 10 minutes, then drain)
• ¼ teaspoon kosher sea salt
• 2 tablespoons sprouted hemp seed powder
• 3 tablespoons date syrup
Topping:
• ½ cup dark chocolate (70% or higher), melted
• Sprinkle of kosher sea salt or extra hemp powder (for garnish)
Instructions:
1️⃣ Blend the nuts & seeds: Add walnuts, cashews, sunflower seeds, and almonds to a food processor. Pulse until finely chopped.
2️⃣ Add dates & mix: Add soaked dates, shredded coconut, sprouted hemp seed powder, sea salt, and date syrup. Blend until it forms a sticky dough.
3️⃣ Press into molds: Press the mixture firmly into silicone molds or a parchment-lined dish.
4️⃣ Melt chocolate & top: Melt dark chocolate and spread evenly over the bars. Sprinkle with kosher salt or extra hemp powder for added nutrition. (optional: drizzle Sprouted Hemp Seed Powder Date syrup on top)
5️⃣ Freeze & set: Place in the freezer for at least 1 hour until firm.
6️⃣ Enjoy & store: Remove from molds, slice if needed, and enjoy! Store in the fridge for up to 2 weeks or freezer for up to 2 months.
